I strongly believe that food is medicine for the soul and the body. That is why I only use fresh and locally sourced ingredients when I can. I shop all of the local farmers markets for produce. I am super eco conscious and I try to incorporate that as much as I can in the business, including using recycled materials and glass jars for our chimichurri.
Let’s talk about “Beyond Beef”. I grew up loving my dad’s beef empanadas, but went vegetarian in my teens. I desperately missed the flavor of a savory bite of that beef, egg, olive, and onion combo. I started creating my own “faux beef” empanadas a few years back and they got close. But man o man, the “Beyond Beef” hit the nail on the head. I swear, people cannot tell the difference. So if you are Veggie like me or have a Meatless Monday tradition, they are totally worth a try.
